A Fantastic Night at Lincolnshire Life’s Taste of Excellence 2018 Awards

9th November 2018

On the 1st of November we attended the Taste of Excellence 2018 awards hosted by Lincolnshire Life Magazine. We had been nominated for Wedding Venue of the Year and also our apprentice chef Josh had taken part in Young Chef of the Year.

We are extremely proud to announce that we received a Gold Citation Award for Wedding Venue and a Finalist Award for Young Chef of the year, it was an honour to receive these awards especially as there are so many fine venues, producers and chefs in and around Lincolnshire.

Joshua our apprentice chef devised his own menu and sourced as many local produce as he could. This included Duffy’s chocolate, Kirton Windmill stone ground flour, Pilgrim Foodservice fresh herbs, fruit and vegetables and Foster Butchers for ciabatta bread. He practised these dishes a few times and as staff we had the task of food tasting (one of the many perks of working here. On the actual day of the competition he worked alone to produce a very tasty, well presented 3 course meal which catered for those who have special dietary requirements, the starter being vegetarian, the main vegan and the dessert gluten free. Here is his menu ….

Parsnip and Ginger Veloute

Finished with Truffle Oil and Toasted Ciabatta

***

Sweet Potato, Butternut Squash and Chestnut Loaf with Potato and Leek Rosti

Bundle of Seasonal Vegetables and Caramelised Onion Gravy

***

Flourless Chocolate Brownie with Soft Berry Coulis and Lavender Clotted Cream

As Josh was so very busy with his preparation and service he didn’t get the opportunity to take any pictures on the actual day but here are some from his practise runs which I believe may have been changed slightly but it still gives an idea of the finished product.
